For the BEST fries/hot chips imaginable ...
This is MY method of making yummy, crisp, healthy, fries/hot chips. I call them the ppor man's crinkle cuts - LOL) Peel potatoes and cut them into slices. Take a fork and score both sides of the sliced potatoes in the same direction. Cut ACROSS the scoring to desired size. Place cut fries/chips into a saucepan of water. Cover with lid and boil for 10 minutes. Drain water from saucepan and place fries/chips onto a paper towel to also dry them off. As they are drying off, heat up vegetable oil in a pot, making sure not to overheat it. Place fries/chips into a metal cooking basket and lower slowly into heated oil. (If it starts to bubble too much, quickly remove basket and lower heat setting). Cook fries/chips until golden brown all over. (They will usually float when cooked). Remove pot from heat and remove basket from pot, allowing fries/chips to drain. Empty the contents of the basket into a brown paper bag to further drain. Add salt at his stage. Serve onto plate. (smother with your favorite sauce if you REALLY have to *smiles*) YUMMY! ENJOY! (If you have kids, they will LOVE their fries/chips done this way.) |
